Simple avocado toasts

A day starting with avocado toasts is likely to be a good one.


I have a thing for the first hours of the day. I can easily get out of bed early in the morning and enjoy some quality time sipping tea, reading the news and eating the breakfast that I prepared.

The good thing about May and France is that we get a lot of days off. On May 1st my boyfriend and I prepared these toasts as soon as we got back from our local market. There's always a good reason for good breakfast, especially when it's rainy and cold.

Making a good avocado toast is pretty simple.

Simple avocado toast
Serves 1-2 people

- 1 ripe avocado
- Wholemeal bread from the bakery
- Espelette pepper
- Chia seeds
- Salt
- Basil (optional)

Cut the bread into slices and toast them. Cut the avocado in two halves, carefully get rid of the pit and the skin. Thinly slice the flesh and put them on the toasts. Mashing it is a good alternative (delicious and easy). Add a pinch of salt, chia seeds, espelette pepper and basil on top. Enjoy while it's still lukewarm!
